Hudson Valley Trout, green romanesco puree, tomatillos, celtuce, rutabaga beurre blanc

Coffee rubbed Millbrook venison, celery root, poached pear, radicchio, venison jus

Harlem Valley Caraflex, sunchokes, garleeks, sesame vinaigrette, burnt cream

Dessert

 

Confit apple, dulce de leche, milk ice cream, brown butter crumbs
